Its called masking ;)
Select quick mask from the tools, and use the black and white brush to add a layer mask. Google 'layer mask photoshop' and i'm sure you'll find more info on how it works.

near the "new group" and "new layer"?...that circle, half white, half black?...i played a bit with channel mixer (nice) but i still can't find that thing....it is something similar with "quick selection tool"...but...donno

The symbol than quites alike to flag of Japan.
You use black and white:
Black:accentuates with red
White:reverse it
